Delicious Low Carb Cornbread (my new "go-to" bread)

3 1/2 ounces ground almonds or 3 1/2 ounces almond flour
1 ounce melted butter
2 large eggs
1/2 teaspoon baking powder
1/4 teaspoon salt
Directions:

In a small bowl, mix wet ingredients, then work in the dry ingredients.

Pour into a greased microwave-safe container (about 6-inch square, or thereabouts).

Microwave for 2 minutes at power level 8.

Cut into 8 slices, about 1 carb per slice.

Serve with butter.

Ok, this bread tastes nothing like cornbread whatsoever, but maybe if you added some stevia or something it would be more convincing. However, it is pretty amazing as a bread substitute. Especially since I ate it with chili. You could add any range of spices to this to make it more flavorful, make it your own! I'm thinking pizza crust!! It is SO fluffy and easy and amazing. If you are watching your carbs, do it. You won't regret it.

    This looks amazing I will be getting the ingredients asap for this! Nigella Lawson has a chilli topped cornbread recipe this would be great as a low carb substitute!!

    Not sure if this is the exact recipe I have, but I make something similar. I do add a little Splenda or Truvia...and it's awesome. Really great with chili!

    Not sure!

    Update - I added a bit of flax seed, Parmesan cheese, oregano, garlic salt and basil and baked it, then added pizza toppings and baked some more. WONDERFUL! And so filling.

    It can if you don't get the almond meal measurement right, but I have only had that happen one out of 4 times making it.

    Are the ounces measured by weight or volume? I was going to ask about how much 3.5oz of almond flour would be (1/2 cup?), then realized I wasn't sure if that was weight of volume ounces.
