Chicken Marinade

I like things spicy, so some of my favorites are
* ginger wasabi dressing (picked up next to the sushi stand in the grocery store)
*siracha sauce
* a little soy sauce and garlic paste
* curries and other dry spice blends hydrated with a few tbsp of plain yogurt (also adds a nice brown crust to grilled stuff!)0 -
Does anyone have any good chicken marinades they can share? I love just plain grilled chicken but I am getting pretty sick of dipping it into balsamic vinegar or mustard to get some flavor. Any ideas?
1-1/3 cups soy sauce
1/3 cup Mirin rice cooking wine* (or other white wine)
1/2 cup honey
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
2-3 tablespoons Sriracha chili sauce

light italian dressing is all that we use, marinade it and then grill it...awesome flavor0

I do various ones - so here goes
Mexican Hot Sauce (very low sodium kind) 12oz with 2lbs of chicken, sprinkle in some homemade ranch seasoning - crock in crockpot for 6 hrs on low - take out chicken, shredd, add back to sauce for 30min.
Low Sodium Chicken Broth - 30oz - add in 2-3lbs of frozen chicken, tsp garlic powder, tsp paprika - cook on low 6 hrs and shredd
Herb & Wine Marinade(not sure of brand name) - Low Cal/Low Sodium - pour in crock, add 2-3lbs chicken, cook on low 6hrs and then shredd.
Salsa, Frozen Chicken, crock on low for 6hrs, shredd
For chicken salad - I boil chicken - a whole one or just breasts I then cut up as soon as it is cooked and put in fridge for later use.
Chicken, Apple, Cranberry Salad - 1/4 cp greek, plain nonfat yogurt, 1/8 cp olive oil reduced fat mayo, tsp curry powder, 1Tblspn lemon juice, 2cups of chicken - put chicken, one apple cut up(no core), cranberries (dried) in a bowl. In a seperate bowl mix yogurt, lemon juice, mayo, curry and then pour over chicken mixture, close container and shake.

Will a brine work for ya?
I've been on this brine kick since I discovered how much better my chicken tastes.
I wish I had exact amounts but I take 3-4 chicken breasts, toss them in a ziploc bag with a 1/2 a palmful of salt, bay leaf, fresh ground pepper and couple peeled whole garlic cloves. Swish around so the salt is dissolved. Brine in the fridge overnight or a couple hours. When ready to cook, dump them out, rinse off and then I rub them with chill powder/cumin and grill.0 -

1/2 Cup Olive Oil
1/2 Cup White Wine
1 tbsp Oregano
1 tbsp Sugar
1 tbsp Salt
1 tbsp Black Pepper
2 tbsp Huy Fong Fresh Chili Garlic Sauce or Rooster Hot Sauce or Sriracha (adjust to your taste)
1/2 tbsp Paprika
1 tbsp Chopped Garlic
Marinate overnight and grill the chicken next day. Adjust all the above according to your taste - I usually eyeball it and like it spicy.0 -
simple one I like
Teriyaki sauce (I use yoshidas)
lil soy
spices (I use ginger, cummin, white pepper, garlic)
marinade a couple hours and grill away0 -
I like stir-fries.
2 tsp. dry sherry
2 tsp. soy sauce
1 tsp. cornstarch
marinate for 10 minutes and stir-fry. I add tien tsin chili pepper seeds while cooking to heat it up.0 -
I sometimes use Low Fat Italian Dressing, or just put Olive Oil, Oregano, and Lemon Juice on it with some minced garlic0

I have five chicken breasts currently sitting in this marinade in the fridge:
4 tsp Dijon mustard
2 tbsp balsamic vinegar
4 tbsp organic honey
4 tsp lemon & pepper seasoning
4 tsp garlic powder
When it's time to bake them in the oven for dinner tomorrow, each breast will be wrapped by a slice of thick-cut bacon.
350 deg F for 30 minutes or until bacon is dark brown.0 -

Naturally brewed soy sauce, Worcestershire sauce, minced garlic, brown sugar, salt, pepper, cayenne, brown sugar, and a crap ton of dried parsley. I always marinate over night. Totally delicious.0
