What is your fav quinoa recipe?

I have recently become a huge fan of it, but have not really cooked with it at all before. Looking for yummy ways to add it to my daily diet!

Just made quinoa (cooked like rice-1.5 cups) topped with the zest and juice of one lemon and a tablespoon of extra virgin olive oil. A bunch of asparagus cut up into chunks and sauteed til crisp tender and a couple handfuls of cherry tomatoes. Top with 1/2 grilled chicken breast and some shaved parmesan.

a quinoa salad with diced of tomato, avocado, cucumber, red pepper (corn if you like) with a homemade dressing (lemon juice or xeres vinegar with olive oil). Parsil goes well with it too !

oh I forgot the delicous nuggets my boyfriend did ! Mix quiona with grounded zukini. mix with eggs and cook in a pan ! I am pretty sure it would be delicious with dried tomato and herbs like thym and maybe garlic !

1/4 cup (uncooked) quinoa, 3-4 tbsp tomato sauce, 2-4 tbsp shredded cheese of choice, and about a cup of spinach makes a great 200 calorie snack. You can add meat (I love to add chicken sausage) and more vegetables if you want to make it into a main meal.

Edit: to be more specific, basically cook the quinoa (takes about 10 minutes), and stir in everything else (put in spinach early enough so that it wilts). If adding meat, cook that ahead of time and then add it in at the end.0 -

This. It's to die for. I add Rotel tomatoes to it. And I cook it with the oil because when you use extra virgin olive oil, it's healthy fat0 -
