Shredded Chicken Lettuce Wraps

Thought I'd share one of my fav lunches - low carb and TASTY!

First on a Sunday, boil some chicken breast, maybe 4 of them, then shred with a fork once cool enough to touch. This should prepare you till Thursday. The two options I've done:

Buffalo Lettuce Wraps:

Add some franks red hot to a portion of the shredded chicken and mix. Lay inside a lettuce 'boat' or full lettuce leaf, top with crumbled blue cheese, diced red onions, diced peppers.

Teriyaki:

Add Teriyaki sauce to the other portion of the shredded chicken and mix. Lay inside the lettuce boat, toss in some diced red onions, slivered almonds, diced peppers, and voila!

I'll usually pack 2 a day for my lunch, and I'm well satisfied;)

    Awesome ideas. They both sound amazing. We are having Taco lettuce wraps for dinner tonight. No shells or tortillas for us :-)

    Just made a roast chicken today. Will definately be using some of it in lettuce wraps. Thanks for the great suggestions. Was looking for some new healthy chicken ideas. Perfect.

    Love this wrap.
    I have been trying to cut down on breads, rice, pasta. I use lettuce wrapping more and more.

    You can also cook the chicken in the crockpot. Enough Fat free chicken broth/water to cover and you are good to go!

    BUMP - sounds great - gotta try these - have never ever boiled chicken breasts before though, so curious what kind of seasonings or anything you add to the water for flavour?

    These sound like some good options but I was secretly hoping this was going to be the top secret PF Chang Chicken Lettuce Wraps. I so love them and want to figure out not on how to make them but how the hell they even get the chicken like that. Still though, I will try these as they should pretty good.

    D'uh, I forgot about lettuce wraps!! I've been eating these little flavoured tunas for lunch on crackers, but today I'm using in lettuce wraps instead. Mmmmm, spicy peanut satay tuna in lettuce.

    mmmmmmm, i'm gonna have to add that to the repertoire
