Chicken Gyros-- SO good and super low-calorie
                    We just had this last night, and it was so, so simple, delicious, and surprisingly low-calorie.
Yield: 4 servings
Ingredients:
-red wine vinegar (2 teaspoons)
-olive oil (2 tablespoons)
-garlic (4 cloves)
-1 large lemon
-salt and pepper to taste
-1 lb boneless chicken (breast or thighs)
-pitas
-feta cheese, to taste
-tzaziki sauce (suuuper easy to make your own, too)
-cucumber
-lettuce
-tomato
**I also used quinoa as a side and eventually incorporated it into the actual pita
**1 1/2 cups chicken broth (for quinoa)
Directions:
-Mix together the juice of the lemon, garlic, olive oil, and red wine vinegar in a large bowl. Place/cover chicken in mixture. Cover and marinate in the fridge for one hour, turning chicken halfway through.
-With about 10 minutes left of marination time, bring chicken broth to a boil in a medium saucepan. Once boiling, add in 1 cup of quinoa, lower temperature, cover and cook for 14-18 minutes.
-Pull chicken out of fridge. Grill until fully cooked. Let rest 5-10 minutes, then slice into bite-sized pieces.
-Assemble your pita with whatever you fancy and enjoy!
