Mexican Stuffed Peppers 42 grams of protein!

I made these Based one a pinterest recipe, We love Mexican so i changed it up a bit. super filling
Coles - 5 Star Extra Lean Beef Mince. 5%Fat, 250 g
Raw - Capsicum***, 2 Large
Beans - Kidney, canned, 1 cup
Generic - 1 Medium Brown Onion, 1 cooked
Old El Paso - Mild Chunky Tomato Salsa, 300 g
Veg - Mushroom, 1/2 cup
Oil - Olive, 0.5 tablespoon
Westacre (Aldi) - Light Tasty Cheese, 25 g
Per Serving: Cals 452 carbs 43 fat 15 protein 42 fiber 13 sugar 17 ( everyone's will be slightly different depending on products etc)
cut tops off peppers and pull out the insides and pop them in the oven to soften a bit while cooking the mince.
Brown onions and mince in olive oil, Then add mushrooms and salsa. Then stuff into pepper and top with cheese and bake until golden and top with sour cream!

Try adding quinoa for even more protein0 -
i was going to but didnt want/need the cals they were very filling as it is0
