Looking for vegetable + soy recipes

This weekend, I pretty much tried to stay under my desired calories and still gained weight (not to mention I walked 5 miles, which is more than I've ever done in recent years)...
Therefore, I think I need to rethink my eating habits: low carbs, no meat. (I'm not vegetarian, but meat doesn't seem to help me.)
Last week, I ate Tofurky Sausage Jambalaya (http://www.tofurky.com/recipes/recipe_details.asp?RecipeDataID=65) and saw the weight come off (I was down 4 lbs). I'm looking for similar recipes: filling, but veggie laden, something that I can make on Sunday and eat throughout the week.
Anyone have any ideas for me? Appreciate the help!
p.s. Any recipes with nutrition info would be awesome.

I eat vegetarian quite often, but I don't eat soy... I can recommend chana masala as a delicious chickpea curry... I like black bean burgers... they leave you lots of room for exciting toppings in your bun... I just love refried beans, I could eat them every day.
There are reasons not to eat too much soy... they phyto estrogen stuff.. you can take it or leave it, but I thought I would put it out there0 -
you could also try just cutting the meat down a little... when I make stuff like jambalaya, I use less sausage than required - and I use turkey sausage... make sure it's full of beans and veggies.0

I am a vegetarian and I usually do all of my cooking on Sunday's for the week. There are a few websites that I use for different recipes: http://ohsheglows.com/; http://www.yumuniverse.com/; and http://www.skinnytaste.com/. Skinny Taste has vegetarian and meat recipes.0

As a vegetarian I occasionally eat Yves Meatless Ground in tacos and make a dish with organic, non-GMO tofu maybe once every month or two. I wouldn't recommend it becoming a regular thing because studies have shown that soy can mess with your hormones. You can find just as much satisfying protein in beans, lentils, nut butters and quinoa.0

A veggie chili would be great for you -- very similar to a meaty chili.
You can make seitan with wheat gluten and soy sauce. It's a meat substitute, very, very high in protein and low carb.0 -
thanks! Yeah, I'm not thinking of going overboard with soy. I take small doses. I'm thinking veggie+soy recipes and also just filling veggie+protein recipes. As long as there's protein0

Look at these recipes. They're the only ones I could find with nutritional info. The whole website is vegan but you can un-veganize it. Anywhere you see egg replacer use regular egg, nutritional yeast use cheese or hummus, silken tofu use coconut milk/cream/etc.
