Lightened Up Pad Thai for Two :love:

■1 tablespoon sesame oil
■6 cups green cabbage, finely shredded
■1 ½ cups mushrooms, chopped (any kind)
■2 cloves garlic, minced
■3 tablespoons soy sauce
■2 teaspoons sugar
■2 large eggs
■1 ounce salted dry roasted peanuts, chopped (or ~4 tbsps) - optional
■2 tablespoons fresh cilantro or Thai basil, chopped

1. Set a large frying pan or wok over medium-high heat. Add the oil and swirl to coat. Add the cabbage and cook, stirring frequently, for 7-10 minutes, or until tender-crisp.
2.Add mushrooms and cook for about 3 minutes, until softened.
3.Add garlic, soy sauce, and sugar and stir well to combine.
4.Add eggs and stir constantly, scrambling them into the hot cabbage mixture.
5.Serve immediately, topped with the peanuts and cilantro or Thai basil.

I absolutely love this recipe! I have made this multiple times, and I am a terrible cook but it worked out every time and tasted delicious! I actually found that there were leftovers when made for only 2 people (thats 3 cups of cabbage, 3 mushrooms, etc. for just 1 person).

The other night I didnt have all the ingredients/I dont like eggs, so I tweeked it a little and it ended up being 208 calories. I added onions and used honey instead of sugar, as well as used brown rice instead of eggs. I made a half recipe with these substitutions, but the rice ended up filling me up so I only had half of the recipe, which ended up being 208 cals.
