Can I bake chicken in a can of enchilada sauce?

My pantry is a little bare, and I don't feel like going to the store.
I've got chicken breasts, brown rice, and enchilada sauce. I was thinking about putting the rice in the bottom of a casserole dish, putting the chicken on top of that, adding a can of chicken broth and another cup or so of water, then topping the whole thing with the enchilada sauce.
For my side I was thinking canned chickpeas, maybe?
Like I said, the pantry is VERY bare. Has anybody ever tried a recipe like this? Do you think it will work?

Sounds like it should work. I've done similar with chicken, marinara sauce and mushrooms. Only thing I would be worried about it the rice cooked proportionately to the chicken. Though I've never cooked rice in the oven before, only on the stove.

yeah i would cook the rice on the stove instead and just the chicken and sauce in the oven0

as for the cooking of the chicken, in relation to the rice you could cut the chicken in to smaller pieces they would cook faster.0

I've made tons of chicken and rice casseroles. I've get a pretty good grasp on how to handle that part of it. I just don't know how the enchilada sauce will work with the other ingredients... Usually I use some sort of cream soup.0

I've cooked chicken casseroles with a tomato sauce before and they worked out fine, so it should be the same. Good luck and let us know how it is!0

sometimes enchilada sauce can be a bit stong/spicy tasting. you might want to add a little water to it if you are sensitive to that.0

Do you have a slow cooker? Rice, chicken pieces, (green) enchilada sauce, onions, and olives. At the end of the day, it is so nice to come home to. Enjoy!:happy:0
