Dinner Ideas

Hey everyone! I hope Friday is treating you well--it's almost the weekend! Yay! ... I was wondering if any of you had some fun low calorie idea for dinner tonight--I am in need of something different. It can't be too difficult--haha!

    Well I have 3 small kids so i am looking for fun as well. So sometimes I will have them make a home made pizza with part skim cheese or tonight we have having chicken fajitas. I will cook the chicken in Pam and then cut up lettuce, tomato onion and reduced fat cheese in small wraps. Usually I can have like 3 for dinner with the calories and still be good.

    I like cauliflower mash, I steam the cauliflower and then add a tiny bit of olive oil and salt free spices to taste (sometimes I add a bit of hot water for consistency) then I use the hand blender and it ends up with a similar consistency to mashed potatoes. I have some leftover that I am eating tonight (along with leftover salmon, mmm)

    I like making Pita or flatbread pizzas. I use toufayan whole wheat pitas or Flatout Flatbread, make my own sauce ( small can of tomato sauce, 1/2 tsp minced garlic or garlic powder, a little basil and a little oregeno) and whatever toppings I want.

    It tastes great and is much healthier than take out.
