Crustless Breakfast Muffin Quiche

I made these this morning and yum! Makes 12 "muffins", only 78 cals each, easy to make and put in the freezer for easy breakfasts later. They puff up nicely and if you don't like sausage you can always substitue for veggies or bacon. I think I will add in a little chopped spinach next time. Thought I would share!

1 cup egg beaters
1 1/2 cups 1% milk
1/2 cup bisquik heart healthy baking mix
1 1/2 cups jimmy dean turkey sausage crunbles
1/2 cup cheddar cheese, shredded , fat free

Directions:
1 Preheat oven to 350.
2 Mix egg beaters, milk and baking mix. Season with salt/season salt and pepper to taste.
3 Divide egg mixture between 12 greased muffin tins.
4 Divide sausage between muffin tins and cover with cheese.
5 Bake 15-20 minutes or until tooth pick inserted comes out clean.
6 Freeze left over muffins in single serving zip top bags. To reheat, place frozen muffins in microwave for approximately 60 seconds.

    Tried it in between a slice of light multigrain toast this morning, a yummy breakfast sandwich and lower in cals than any you can buy!

    I made these this morning! I used liquid egg whites instead of Egg Beaters, reduced fat instead of fat free cheese, and skim instead of 1% milk. I also added fewer turkey crumbles, and some additional chopped spinach, as suggested by the OP. Each "muffin" totaled 63 calories for me, and was delicious! Next time I think I'll try it with a little less egg white and a little more of the baking mix, to see if I can't get them to be a little more muffin-like, which will up the calories a bit.

    (They were puffier earlier, but I kept taking them out, deciding they weren't done, and putting them back in. It might have just been my oven and/or my personal preference, but I found that they took 30ish minutes.)
