peel it, slice it 1/2" thick. brush w/ olive oil and sprinkle w/ garlic powder. roast until tender, about 30-40 mins, then eat!

Mix together 1 Tbs mirin, 1 Tbs soy sauce, 1 tsp sugar and 1/2 Tbs miso paste. Cut aubergine into bite size chunks and stir fry in a little oil for about 10 mins. Add a couple of chopped spring onions and the sauce mixture and stir fry for another minute. Enjoy!
