    I also make turkey meatballs with oats, an egg and spices and serve them with spaghetti squash.

    A friend from this site turned me on to this turkey stuffed peppers ~ I'd eat it every day if I could, it's soo good!

    BTW I steam the peppers in a big pot for about 5 minutes before stuffing/baking to soften a bit.

    Kimchi fried rice:

    Brown ground meat in a wok with some minced garlic. maybe some ginger, maybe some green onions.
    Add a cup or two of chopped kimchi. Stir fry until kimchi looks cooked.
    Add cooked rice and a beaten egg or two. Stir and fry together.
    Add liquid from the kimchi, mix in.

    For four people I use a pound of meat, about 2cups of kimchi (homemade if possible). The amount of cooked rice from 1 cup raw, and 2 eggs.

    Turkey burgers: 1 lb ground turkey, 1 eggs, 1 tablespoon lea & perrins low sodium, 1/4 cup chopped onion, 1/4 cup chopped green bell pepper, 1 tsp mustard, 2 cubes low sodium chicken boullioun, and 1/2 cup finely chopped tomatoes. mix together form patties. Use 1 tablespoon canola oil in small frying pan to cook. NOTE: I usually don't use ground turkey because it actually has more fat than 10% ground beef unless you ask the butcher to grind BLSL turkey breast.

    Turkey stuffed peppers, using either brown rice, quinoa or even beans
    Buffalo chicken meatballs - use oats in place of crumbs, add eggs, some seasonings (ck bland) and add some buffalo sauce...bake balls, and when done, roll in more buff sauce...love these
    Turkey chili in crockpot
    Turkey meatloaf (again with oats) and bake in muffin tins..easy for work and easier to freeze/store

    I like chicken taco salad!!! use ground chicken ... spinach, pico, fresh corn and black beans and salsa ... fat free shredded cheese (if you have to have it) Love, Love...

    Gorund beef does get an unfair rap - if you get 10% (or even better 5%), then brown and drain before using, the fat is very low. (I know 20% is cheaper, but when you think about the fat you're throwing away its not really a saving!)

  • I'm pretty bad about eating clean, but I do have some.

    Yesterday I cooked a mix of ground turkey and chicken, sauteed some fresh tomatoes, garlic, and other various dried seasonings, and put that on top of some zucchini ribbons.

    The other day I used the same ground turkey and chicken mix, added some carrots, onions, garlic, tomatoes, and brown basmati rice, and filled a bell pepper with it (the leftover filling was also good inside a lettuce cup... I did add a few crumbles of fat free feta to it, though.)

    I got some ground turkey on sale last week on the clearance rack, so this is great.
