What's your definition of healthy? I live in New Mexico and eat Mexican food all of the time...I find it all to be pretty healthy. A lot of it is calorie dense, but really, it's the portions that get you. I usually only eat about 1/2 of whatever when I go out for Mexican...or really pretty much any restaurant.
If I'm feeling like something lighter I'll usually go for some grilled fish tacos with soft corn tortilla. If I'm up for something heavier and I can fit it into my macros, I go for a big carne adovada burrito smothered in cheese and chile.0 -
Grilled Steak Rancheros Tacos from one of my favorite restaurants in Santa Fe
I also make a lot of Mexican food at home...0 -
fajitas that you make yourself, skip the tortillas or taco shells0

When I eat out I ask for a to go box when they bring my meal...1/2 of it immediately goes into the box0

I typically get a quesadilla rellena with beef. The sides are salad and rice. Im not sure the nutritional content of it. Ive got about 700 calories remaining. I dont like to venture out and change what I normally eat. Do you happen to know the approximate nutritional value (calories)? or have any recommendations for "lighter" meals.0

Try going to foods > database and look up the food items for an idea of their nutrition content.
Have fun tonite!0 -
Think of it this way...your calorie goal...and you say you have 700 calories left...well, your calorie goal already has a substantial deficit built into it. If your goal is 1 Lb per week, you have a 500 calorie deficit built in...if it's 2 Lbs per week then you have 800-1000 calorie deficit built in....
So...if you have 700 calories before you hit your deficit goal...in reality you have 1200-1700 calories before you hit a maintenance level of calories. Just enjoy yourself and have fun...it's one night.0 -

Im so sick of cooking this week!!!!!!0 -
Quesadilla rellena typically includes refried beans, which are high in fat. Substituting black beans will save 200+ calories per cup.
The fajitas may be a better option from a calorie perspective, because you can control how much of the meat, tortillas, and garnishments you eat.0
