Work lunches

Hi guys!

What do your work lunches & snacks look like? Starting a new office job on Wednesday, looking for some healthy options that are easy to package + prepare :-).

  • Bump - I'm interested in this too! Lunches are always the hardest meal of the day for me to figure out.

    I usually cycle through a few different things-

    Big salads- I'm loving mixed greens, goat cheese, roasted sweet potato and dried cherries with balsamic. Also greek salads

    tuna salad or chicken salad with crackers

    pb&j

    leftovers form dinner the night before

    I also bring snacks like cut up veggies with laughing cow, fruits, plain yogurt mixed with berries and string cheese and almonds. I don't usually eat all the snacks but I like to have a variety to choose from!

    And I find it really helpful to pack my lunch at night, while cleaning up after dinner. Everything's already out, so i might as well get it done so I can sleep a few extra in the morning!

    It's critically important for me to bring a lunch to work or everything I'm doing will fall apart. My office is swimming in junk food -- we even have a hospitality fridge loaded with cake and cookies. I can't let myself get hungry during the day.

    I've eaten the same lunch for a month. I don't like to cook, so it's simple. One or two cups of lentils, sometimes with a cup of brown rice, with chopped vegetables that vary day to day: tomatoes, onions, avocado, carrots, broccoli, butternut squash, etc., with sea salt and pepper to season. Sometimes I cook black beans or other beans, but mostly I use lentils. They're loaded with protein.

    I cook it from scratch the night before (no canned beans) and heat it in the microwave at work. I also bring an apple for a snack.
