What are you having for dinner tonight? I'm looking for (healthy) inspiration!

Yesterday I had a baked chicken thigh (I like stuffing cheese and mushrooms under the skin) seasoned with an herb mix, a portion of broccoli and a piece of calabaza squash (which is a tasty winter squash, I baked it drowning in butter).
Tonight, I have no idea. I haven't gotten hungry yet.0 -
A steak salad ( sliced rare flatiron steak, 2 cups of spring mix, three sticks of Weight Watchers smoked string cheese, cut up, a tablespoon of ranch dressing.) And a slice of sweet corn quiche. All calorie affordable.0

Quinoa flake chicken, stir fried veg, and the hubby gets some roast new potatoes.
For the chicken:
Marinate chicken (I like thighs and drumsticks, you could use breasts if you are virtuous) in some buttermilk and garlic salt.
Batter with quinoa flakes.
Place in oven tray and spray with a little olive oil.
Bake at 200C for 40 minutes. It's calorie-poor man's kentucky fried.0 -

Cooking Light's Meatloaf muffins. Two muffins per serving, having half a baked sweet potato and steamed zucchini on the side.

whole wheat pasta from scratch with fresh vegetable sauce (tomato based this time because I have a jar of passata)... cooking some Italian sausages for the meat eaters in the house but I think I will skip it in mine.
Not the lowest calorie meal, but I'm working outside today, and doing the 30DS, and I didn't eat much this morning...
Tomorrow I'm roasting a whole chicken to feed everyone for the week while I'm away...
I'm going to make vegetarian chili next week for taco salad in a tortilla bowl...0 -

My wife and I will split a grilled skinless chicken breast (about 5.5 ounces each) that has been marinating in some olive oil, lime juice, and Greek seasonings. We'll have that with some baked eggplant coated with Italian bread crumbs and parmesan cheese (we use egg whites as glue). And we'll share a bowl of tomatoes (perhaps with a little mozarella cheese and fresh basil). For dessert, some fruit (we have blueberries, strawberries, pineapple, watermelon, and tangelos to choose from). Roughly 500 calories for each of us. It's a ton of food. I'm hungry!0

i'm a chef in training so i tend to go overboard with dinner sometimes. but today isn't one of those days - this is really easy to make. if you want the recipe, feel free to add me!

We're trying the Tofurky Italian sausages for the first time. I cut them up and browned them, along with some sliced mushrooms, then added 1/2 jar of Mezzetta Napa Valley Roasted Garlic pasta sauce (the best jarred sauce I have found). It's simmering right now. We'll have it over spaghetti (a real treat because I haven't made pasta since we started on MFP in January).
The banana "ice cream" someone posted here earlier today is for dessert. I'm getting really hungry...0 -

how do you make something Cuban style? I tend to fall right back on chili powder and coriander (I call that Mexican style) or turmeric and cumin (middle eastern-ish) or is this a recipe?0 -

Here's the recipe (it makes 4 portions, I just freeze the other ones for lunch or dinner later)
Ingredients:
1tbsp of olive oil
4 cloves of garlic chopped (or 4tsps of the pre-minced - I use more because I love garlic)
1 onion finely chopped
1 1/2 tsps of ground cumin
2 cans (15oz each) of no-salt added black beans, drained
1/2 cup of pure orange juice (I usually make this with a tbsp of orange marmalade and a 1/2 cup of water)
1 avocado, sliced
Building it:
Heat the oil in a large nonstick skillet over medium-high heat. Add garlic & onion and cook, stirring frequently until the onions soften and get kinda translucent. Around 3-5 minutes - Just keep an eye on them.
Stir in the cumin and cook for a minute or until it gets fragrant (it smells so nice n' yummy!)
add the beans and the orange juice (or marmalade & water if you do it like me), turn down the heat to low and let it simmer for 15-20 minutes until the sauce begins to thicken.
With the back of a spoon or spatula, smash up some of the beans into the sauce and let summer for another 5 minutes.
You serve it with 1/4 of the avocado sliced up on top. It goes really nice on rice. I prefer brown rice because of the texture and the protein.

250 calories

9 g of fat (but these are good fats - not french fry n' Doritios fats)
1 g of saturated fat
0 mg cholesterol
426 mg sodium
11 g fibre
