Hi Everyone,

My friend gave me this recipe and it is my new favorite thing to eat for lunch or dinner. It is great when you want Mexican food.

Prep time: 5 min. Can feed about 2 people

Ingredients:

Mission - large flower tortilla,
Grated American cheese, 1 /4 cup
Birds Eye - Steamfresh Corn - Singles
Uncle Ben - 90 sec brown rice (use per serving, I use the left over servings in other meals later in the week)
Albertsons - Black beans (use per serving, I use the left over servings in other meals later in the week)
1 Tomato

Cook the rice, black beans and corn. Pour (per 1 serving whatever the package says) in to a bowl. Add cheese and diced tomato. Mix together. Then spread in the center of the tortilla and roll up to make a burrito. There usually enough filling to make 2 -3 burritos.

I use the left over beans and rice to make something else later in the week. Like chili or add the rice to another chicken dish I am making later.

Total: 413 Cal (to make it lower cal and less fat take out the cheese and a wheat tortilla)
55 Carb
14 Fat
16 protein

That's perfect!, I live on Mission Street in SF, so I'm surrounded with reminders of my love of Mission burritos!
