    I've become mildly obsessed with mason jars recently. So far I've just been making a bunch of breakfast smoothies over the weekend and then freezing them in mason jars, but I definitely want to try the salad in a jar technique. Here's a link to a woman who makes six salads (3 different kinds) within an hour. They look so delicious! It would probably take me three hours doing it my first time, but it's worth a try.

    She has a lot of other good recipes in there if you aren't ready to try that particular one.

    Sorry about that, yeah, I think that site is mainly geared towards paleo/primal eating. This site however, all the jar salads seem to be vegetarian, using tofu, quinoa, etc.

    I've seen this before, but I'd forgotten about it. Might try it. I can just seem myself taking this with me and substituting one of my sandwiches when I go shopping. I bring my own sandwiches, but the GF bread I make--one that actually holds together--is rather high-cal, so eating only one plus a healthy salad would be better than two with a few carrot sticks. Not sure if I would make up a bunch at a time, as I like my salads made fresh, but still, it's a really neat idea!

    Thank you, this is a great idea! I'll be sure to buy some mason jars. They would be so handy for lots of things in the kitchen and elsewhere. I have a mason jar with elastic bands in it, for example, and another with small office supplies like paper clips.
