Low Carb?

Bout to open a big can of worms and the mfp angries are going to come crawling out to respond...
I'm about three weeks away from my wedding, so I decided to start tracking carbs. I thought maybe it would help with water retention if I cut out bread, pasta and rice just until the wedding. During this time, I also started researching low carb for the first time in my life just to see what the big fuss is about.
Well, what I have learned is that fruit and veggies have a lot of carbs and it seems impossible for me to reach 1400 calories and still remain under the limit of what is considered "low carb". I refuse to cut out, limit, or even modify my fruits and veggies. I mean.... I'm not diabetic so why do that?? Fruits and veggies are packed with nutrients, low calorie, and fill you up faster??? I do understand why someone with health issues would do it, but why would a healthy person cut back on fruit?
Anyway, it got me wondering, how do others do it? I see some talking about eating a lot of bacon and eggs, but that seems like a lot of cholesterol? If you are on a low carb diet and do not eat loads of bacon and eggs, please share an average day's menu so I can better understand how it is possible? Also, what are the health advantages of low carb for a healthy person who isn't diabetic or pre-diabetic?

I've lost lots of weight in the past low carbing, but was told many, many times it wasn't 100 percent healthy. I've been on cholesterol medicine for years, but with a family history of heart issues, the meds are a necessity. I've been on this website only since January and it's great, just don't have too much time to check out all that's available.
Counting calories worked for a few weeks, but I need to lose about 20-25 pounds by September and was wondering myself, if there is a healthier version of low carb/low cal plan that someone out there can suggest.
I can understand you trying to lost those last few pounds for your wedding, congrats and good luck.0
