We are having a work Derby Breakfast on Friday. I need some healthy ideas on things I can make. I need to feed about 10 people.

Make a breakfast quiche, just don't go crazy with the unhealthy ingredients.
Or fresh fruit is always yummy in the am0 -
How about the south beach diet breakfast cups! its egg whites, mozzarella mushrooms and spinach. you can leave some things out but you bake it in cupcake cups and it's pretty yummy! plus easy for gatherings since it's individual servings.

whenever we do things like this, I am always asked to make a fruit salad. Its easy cheap and healthy. cant go wrong0

I thought about the fruit and salad thing but someone already beat me to it LOL
And everyone else brings options that are just not in my calorie range.....

I made this for Christmas morning but it could definitely work now, it's a stuffed apple strata, cinnamon swirl bread, apples, pecans cinnamon. You are supposed to prepare it the night before and bake right before serving so you could make it tonight and bake it while you get ready for work. it's delicious and feeds a lot of people!0 -
