Guilt-Free Grilled Cheese & Artichoke Sandwich

I simply MUST share this with all of you. If I didn't I'm pretty sure someone in the universe would consider it a sinful shame!
I saw this most delicious sandwich on Pinterest, but realized if i made it I would be guilt ridden.
I bought some ingredients and went to work on how I can make myself feel no guilt and I have accomplished my goal!
Grilled Cheese & Artichoke Sandwiches
1 Can of Artichoke Hearts
4 TB of Fat Free Cream Cheese
2/3 C Colby & Monterey Jack Cheese
Garlic powder & Black Pepper to taste
6 Slices of Italian Bread
0 Calorie Spray Butter
Dice up the artichoke hearts and place in a bowl. Add the cheeses and mix together until creamy with no cream cheese lumps. Add garlic powder and pepper.
Spray the bread with the butter, divide the mixture into thirds for the bread, top with the other buttered slice and grill until browned on both sides.
And if you want to add a little more veggie goodness - feel free to add some cooked spinach to it, it will barely change the calories but will of course add more flavor and healthiness!
Then prepare for tastebud heaven and guilt-free pleasure!

I had this for dinner last night and it was YUMMY!
I didn't follow exactly, but the gist of it (I just used 1 TB of cream cheese, some light mozzarella (what i had in the house), and 1/2 cup of artichoke hearts on some 12 grain bread and then toasted. Delicious.0 -

Quick question: Did the 0 cal butter spray work OK? It seems like it would be too watery to give you the nice crispy and buttery bread that makes grilled cheese so great.0 -
