Crock Pot Ideas??

I just bought a crock pot and want to be able to create amazing, delicious, and healthy dinners. Any ideas? possible including chicken, brown rice, veggies????

I got a crock pot as a present about 4 years ago. Last week was the first time that I used it and it was delicious.
I bought a LEAN piece of roast (beef), put some peeled potatoes in the bottom, some onions and a couple of baby carrots. Sat the roast on top, added 2 cups of water and cooked on high for 3 hours, then on low for 5 more.
It was really yummy and the roast (2 lbs) was big enough that my husband had a couple of meals of it. Now, you got to make sure to buy a lean piece, otherwise you add calories quickly. Also, I only had the potatoes in there for flavor. My husband ate the potatoes and I ate brown rice.
Unfortunately, this is the only recipe I have so far ....0 -

Another thing to check is put in crockpot or slowcook and check the search feature here on MFP, this topic comes up ALOT so there are trillions out there to try

I haven't really made much yet, but it is really inspiring!
In the cooler months I like to make chili - just use your favorite chili recipe and don't add as much liquid as you normally would. I usually add as much as I want it to look when its done cooking.
One thing that is crazy easy if you don't feel like being too creative is just plopping a chicken into your crock pot in the morning. I don't add veggies because I don't like 'em that well cooked but you could add some if you wanted to or if you wanted some aromatics. Add whatever spices you'd like, then cook on low all day. The chicken is fall off the bone tender and its easy to pair with a veggie and starch. And it provides leftovers foe you to eat for lunch or repurpose into a new dinner the next night.0 -
