    You can put pretty well anything you want in a calzon.
    Whole wheat pizza dough:
    3/4 cup warm water 1/2 package active dry yeast
    1/2 tsp sugar 2 tsp olive oil
    2 1/4 cup white whole wheat flour 3/4 tsp salt
    combine water, yeast and sugar in 1 cup glass measure, stirring til desolve. Let stand until foamy (about 5min)
    Stir in oil. Stir in oil, flour and salt, until the dough gathers around the spoon.( You can do this in a food processor or stand mixer until it forms a ball.) Turn dough out onto a lightly floured surface and kneed until smooth and elactic (about 10 min)
    Spray a large bowl with non stick cooking spray.Place dough in bowl and turn so that the dough is coated. Cover bowl with plastic wrap and let rise til doubled in volume. (about 1 hour)
    Punch down dough then cut in half. (this makes 2-12" pizza's)
    1/12 of dough (41 grams) 91 cal.
    If you are making it for single size I would weigh out 41 grams of the dough, roll it out to a size and thickness you want, not making it to thin. fill 1/2 the calzon leaving a 3/4 boarder, lightly brush the edge of dough with water, flip it over to cover the ingredients. Press the edges together to seal; crimp edges, place on a baking sheet sprayed with non-stick spray. Cut a couple slits on top. Bake until crust is golden in a 450* oven.

    I love mexican style pizzas so I would use salsa sauce instead of pizza sauce, olives, hot banana peppers, mushrooms, onions, chicken breast sliced thin, low fat marble cheese.

    I'm gonna try this out tonight with some skinnless buffalo chicken.

    Thanks for the recipe, I've been dying for a calzone too...
