"Substitute Your Skinny"
I picked up this book at Borders today. It is by Chef Susan Irby. She has all these common recipes with easy substitutes to cut fat and calories. Everything from breakfast to desserts! I will be trying this one out in the next few days:
Cinnamon-apple pancakes
1/2 cup plain flour
1 teaspoon brown sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/8 teaspoon sea salt
1/4 cup nonfat milk
1/3 cup unsweetened applesauce
Nonstick cooking spray
In medium bowl mix flour, sugar, baking powder, cinnamon and salt. Add the milk and applesauce and stir.
Heat a griddle to medium heat and spray with cooking spray. Pour about 1/4 cup of batter for each pancake. Cook until the center begins to bubble. Flip and cook until lightly browned.
Serving size: 2 pancakes
2 servings per batch
Calories per serving: 77 (compared to 'typical' recipes of 297)
Fat per serving: 1g
Carbs per serving: 18g
Protein per serving: 2g
Sodium per serving: 185mg
She also notes you can drizzle with a tablespoon or two of honey for syrup.

Hmmm good idea. Maybe for a little bit thicker batter? I don't really know I'm no chef!

I milk is what would make the pancake fluffy0

Sounds great! It's the salt that I wouldn't worry about putting in though, would rather have the skim milk than salt!!

i don't think the skim milk would make it fluffy... the milk is skim.. the baking powder will make it fluffy.
if you're gonna use something nonfat, i would use yogurt or cottage cheese. something with some body. but if you're going to use skim milk, you might as well just use water.0 -
You should check out the Eat Shrink & Be Merry girls. They are on Food Network Canada and have a few books out. I like their receipes because they don't use shortcut ingredients or things like Splenda. One sister is a chef and the other is a nutritionist.0
