No Bake Energy Bites

Recipe as it came:

1 cup dry oats
2/3 cup toasted coconut flakes
½ cup peanut butter
½ cup ground flaxseed or wheat germ
½ cup chocolate chips
1/3 cup honey
1 tsp vanilla
Mix all ingredients thoroughly in a medium sized bowl. Let chill in fridge for half an hour. Once chilled roll into whatever size balls you would like. Store in airtight container in fridge.

My variation:

1 cup whole grain oats
1/3 cup unsweetened coconut flakes
½ cup all natural peanut butter
½ cup cacao nibs
1 tsp vanilla
1 scoop chocolate protein powder
1/3 cup honey

Then just follow above directions. I’m not including nutritional info because everything can change depending on the brands used. Also, the variations for this are endless. You could add cranberries, raisins, etc…… But one thing for sure, they help me when I’m wanting something sweet.

I'm actually going to try PB2 next time instead of the peanut butter to cut down on the calories some.

    Just made them, waiting for the mix to chill before I roll them but had a taste and really yummy!!

    I didnt have choc chips so just chopped up some dark choc, and used slightly less coconut and flax and added a scoop of vanilla protein powder.

    Next time I might use more protein powder to make them more 'protein bites', and maybe add some dried fruit.
