So good, so easy. I make it all the time. Use mild salsa for the kids. We use medium and it adds a great kick. It is about 187 calories a cup by what I have estimated.0 -
These are some of my favorites. Of course for healthier versions, you have to play around with the ingredients for lower fat/carb/cal versions.

Here's a recipe of mine that's in the crock pot as I'm typing this.
Crock Pot Chicken and Sausage Jambalaya:
Makes *2* servings, well for me at least. It's a lot of soup! Surely, it could be divided amongst more.
Alrighty, so here goes:
- 1 cup chicken broth/stock
- 1/2 cup vegetable/tomato juice (I use no salt added)
- 1/2 cup diced tomatoes (you can add the kind with chiles for an extra kick)
- 1 cup red kidney beans
- 4 oz shredded chicken
- 4 oz smoked 'sausage' (I use smoked turkey 'sausage' and it's delicious)
- 1/8 cup tomato paste
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped celery
- 1 tbsp minced onion flakes
- 1/2 tsp basil and 1/2 tsp oregano
- 1 tsp parsley
- 1 tsp cayenne
- 1 tsp hot sauce of choice
- 1/2 cup cooked rice (add to crock pot 10 minutes prior to serving so it doesn't get mushy.)
Cook on low for 3-4 hours
Per serving: 388 calories, 48 carbs, 32 protein, 8 fat0 -
I love doing BBQ pulled chicken or buffalo pulled chicken in the crockpot. Kids love it!0

Our favorite right now is Salsa Chicken.
Chicken breast
Salsa (I try to find a brand that I can pronounce all the ingredients and there aren't tons of random stuff thrown in)
Diced tomatoes
It cooks while I'm at work and when I get home I shred it and let it sit to absorb the rest of the sauce. Then it's served either plain or on rice. I did have some on taco shells the other night with cottage cheese w/ lime. Delicious!0 -

This is going to sound so silly because it's so easy - but someone had to tell me to do this before it ever crossed my mind - I put sweet potatoes whole in the crockpot and squash with a bit of water. Just make sure you pierce holes in them!0
