Any low-carb low-veggie recipes out there?

I know, it's a pretty odd question but I am not used to cooking for someone that doesn't like veggies that I cannot try to force feed them to. Usually my daughter will turn her nose up to foods and that's fine as she doesn't get dessert unless she eats all her veggies on her plate and usually complies.

Anyways, this time I am cooking for someone that just doesn't have an affinity for veggies and I don't think it would be polite to treat them like I do my daughter since they are a grown adult... might make me look like a total jerk. So I need recipe idea's that I can work with that have minimal veggies for him and for my sake low carb.

    As a fellow non-veggie fan...

    93% Lean Beef/Turkey/Chicken
    Tomato Sauce (Cucina Antica Sauce is a low calorie/sodium choice) or crushed tomatoes and Italian spices or even Manwich Sloppy Joe Sauce -- Also works with Taco Seasoning (can make taco seasoning with just Garlic Powder, Chili Powder, and Onion)
    1/3 cup of Wheat pasta per serving
    Mirepoix mixed vegetables Cajun (onion, celery, green peppers) or your choice of veggies - the sauce and meat will hide the veggies :wink:


    Lean Hamburgers on
    Sara Lee 45 & Delightful Whole Wheat Bread

    Fajitas or Tacos
    Steak, or 93% Lean Beef/Turkey/Chicken
    Taco Seasoning (chili, garlic powder, onion)
    La Tortilla Factory Whole Wheat Low Carb Tortillas (found in fresh bread area of store not where tortillas are; dunno why)
    Green/Red/Yellow Bell Peppers & Onions (can cook with meat or separate & add the taco seasoning)
    Newmans Own Chunky Salsa is the lowest in sodium, calories and taste just like Pace.

    Chicken Parmesan
    Chicken Breast, dip in egg and coat with Japanese Panko Crumbs and bake in oven
    Add Tomato sauce & a small slice of Low Fat Mozzarella on each piece
    Can serve with Wheat pasta or by itself

    How about making a chilli - he can have his with rice, you can have yours with a side of tomato salsa, guacamole, sour cream / greek yogurt and he can have the sides that he likes (everyone likes guacamole).

    If chilli is too heavy, then breaded chicken or fish and the same sort of sides - salsa, guac, sour cream, jalapenos, grated cheese. He can have tortilla or tacos and you can have lettuce leaf wraps

    Moussaka with greek salad for you and garlic bread for him

    Do a meze and you can both pick and choose the things you like, while still sharing the meal
