120 Calorie Blueberry Banana Muffins

I adapted my mom's super fattening and super awesome banana bread into low-calorie and delicious muffins. I find muffins are the easiest way to make sure they are even in calories as I can't seem to cut the bread into even pieces while I'm drooling over the smell...

Ingredients:
1.5 cups ripe bananas
1/4 cup unsweetened applesauce
1/2 cup Truvia baking blend
1 teaspoon baking soda
1/2 cup Egg Beaters
2 cups whole wheat flour
1 cup blueberries, fresh or frozen depending on the season

1. Preheat oven to 350. Spray a muffin tin with nonfat cooking spray and set aside.

2. Mash ripe bananas with a fork or potato masher. Stir baking soda into bananas.

3. In a separate larger bowl, mix applesauce and Truvia. Add egg beaters and mix well. Add whole wheat flour and mix well. Add banana/baking soda mixture into the bowl and mix all together. Gently fold in blueberries.

4. Pour evenly into muffin tin. Place in center rack in oven and bake for 18-20 minutes or until toothpick inserted into the center of a muffin comes out clean.

Makes 12 muffins. 120 calories, 0.5 g fat, 4g fiber, 4g protein, 5g sugar.

This will also make your house smell incredible.

    I have a very similar recipe that I made for a fruit cake / spiced nut bread. It is so moist and rich, almost as good as a fruit cake.
