Yum! Pumpkin oatmeal almond butter cookies :)

I found this recipe for breakfast oatmeal cookies:

But modified it slightly for what I had in the house. I haven't tried the original recipe, but I liked mine a lot and thought I'd share!!

Ingredients:
2 ripe bananas, mashed
1/3 cup almond butter (or use any nut butter of your choosing)
2/3 cup pumpkin puree (original called for unsweetened apple sauce)
1 scoop vanilla protein powder
1 tsp vanilla extract
1 tsp cinnamon
1 1/2 cups oats
~1/4 cup dark chocolate chips (I had 50 g)

Preheat oven to 350 degrees. Mix together bananas and nut butter, then add pumpkin puree, protein powder, cinnamon and vanilla extract. Mix well, then add oats and mix until incorporated. Add chocolate chips now if you want them mixed in (I just set mine on top before baking). Let the mixture sit 10 minutes, then drop by spoonfuls onto a baking sheet. Bake for ~25 minutes.

I added trail mix to the top of my boyfriend's cookies because he's chronically calorie deficient. :)

Makes 12 cookies.

    I wish MFP had reunions like the bachelor reunions and at those reunions the hosts chose some of these recipes to make, and I was invited and I would finally get to taste these strange creations and find out once and for all if they actually taste as good as people say and ooh and ahhh about, without me having to go to the specialty health food stores for all the exotic and trendy and healthy ingredients. Cause I just shop at the normal supermarket.
