Cheap veggie meals

I'm on a super strict budget these days, so can anyone suggest some budget vegetarian (but still nutritious) meals please? Only things I don't like are olives, celery and aubergines. Thanks :flowerforyou:

Kale is cheap and here is how I cook it. Put it in a covered frying pan on the stove with some olive oil and a little water. Cook it until it's crisp. I like to add a little vinegar when I eat it sometimes.0

Use (dried) legumes as your main protein source (kidney beans, navy beans, chickpeas, etc) complemented by corn or rice (to provide the complete essential amino acid profile). Use whatever fresh or frozen vegetable are on sale for your sides/vitamins. Season however you like (curry, pepper, mediteranean, etc). I've been told you can cook the dried legumes in a crock pot, so very little real work to prepare.0

Look for a recipe for something like Vegetable Lasagna. I don't know how many mouths you have to feed, but most dishes like that serve 6-8 people, and are freezable. So if you are by yourself, you can make it and freeze the portions and not worry about lunch for a week
Add some home made garlic bread and a salad and you got yourself a big meal for not too many calories.0 -

Also, veggie soups are quick, easy, cheap, and yummy! Sweet potato soup and tomato and bean soups are my favorites.0
