Building a "bad" diet

I am creating a fictitious client for my Nutrition research class. She is 58, works in an office, is overweight, has high cholesterol, and hypertension (my primary disease). A have to make-up a 24-hour food recall. Got any ideas of what high-sodium and high-fat foods she might be eating? How about breakfast?(does she eat any?) Lunch, Dinner? Snacking?

I'm going to give her a couple of beers...

Love to hear some ideas

Probably those Jimmy Dean microwave breakfasts, if anything.
    Lunch is probably from McDonald's.
Snacks would be chips and the like.

No breakfast, no vegetables. Loves cheese, pastas and breads - especially the sweet pastries - meat but not fish, and chicken must be breaded or deep fried. Roasted fowl is okay if it has gravy on it. Hamburgers are always good. And a grazer. May not eat a lot at one sitting but actually never stops eating. Snacks are always available and they would be things like chips, tortilla chips, chocolate, gummies, pudding snacks, chewy granola bars because they 'look healthy'

There will be no walking or minimal movement at best. and lots of coffee, and possibly beer with clamato juice in it, but no water.

(just thinking of a family member's diet)

Take-away curry or Pizza with garlic bread for dinner washed down with a couple of beers

  • Breakfast: Starbucks venti latte coupled with a lemon pound cake.

    Snack: Reeses pieces.

Lunch: McDonald's big mac with a large diet coke.

    Snack: Doritos travel bag

Dinner: Fried chicken with rice and beans. And three scoops of peanut butter ice cream with chocolate fudge and sprinkles.

For breakfast, I'd say a coffee and donuts (office pitch in foods). Since she has hypertension and high cholesterol, I'd assume that she knows that she needs to sneak in some "healthier" eating habits. Because of this, I'd say she eats a salad with fruit for lunch; typical food that everyone eats to be healthy, right? However, instead of a healthy salad, make it one of those high calorie salads from like Applebee's or somewhere that comes with crispy (instead of grilled) chicken on top. Croutons, cheese, and lots of dressing. That's easily 1000 calories, if not over. For dinner, keep it simple and quick. Maybe a TV dinner and pop? For dessert, a piece or two of double chocolate cake and a cup of vanilla bean ice cream. Before bedtime, make her snack on popcorn or chips while watching her favorite sitcom. Honestly, I'd take out the beers. Maybe I'm naive, but I don't know too many 58 year old women who knock out a couple of cold ones after a long day..

    Lunch at McDonalds or KFC.

    Dinner at Uno's or TGIF.

    That should kill her.

Breakfast - Starbucks frou-frou double whipped caramel low-fat mocha latte with cinnamon

Snack at work (10am) - Doritos/candy bar from vending machine or baked goods left in the breakroom

Lunch - McDonald's bistro chicken sandwich or salad, fried, Diet Coke or Sprite, or one of those yogurt-granola things

Snack (if she's still working at 3pm) - more vending food or scavenge anything left in the breakroom fridge

Supper - Lean Cuisine/WW frozen meal

Snack while watching tv - chips, cookies, ice cream. If she drinks alcohol either red wine or gin

She's also downing coffee with creamer/Splenda throughout the day.

*no water because she can't drink it / doesn't like the taste
*no fruit because she feels they're too high in carbs
*on the occasion she does eat salad it's loaded with multiple servings of dressing, cheeses, mayo based pasta & chicken salads
*has no idea what true serving sizes are
*finishes what's on the kids'/grandkids' plates so as not to waste food.

Being an overweight woman with hypertension who used to do little about it, this one speaks the most to me. How I would have still been eating 20 years from now if I hadn't woken up. She thinks her 'low fat' and 'lean' food is healthy and that means she can have junky snacks. I never used sugar in my coffee ever, always some kind of artificial sweetner. Thought it was better for me. Cooking for one person seemed pointless, so lots of 'healthy' ready made meals.

    58...overweight, desk job....let's see.....

As background, I can see her having been in a family who pretty much doesn't do much. Her parents and friends have pretty much been the same way, so she really didn't get the wake up call until now. It would seem to me the the said 58 year old eats a lot of grab and go breakfasts, so many trips through fast food lines and possible starbucks grande mochas and chocolate crossants. She brings her lunch to work, and it is usually some sodium filled microwave meal, or she will order out with the office and go together on pizza, more fast food, or even chinese (which she will eat the entire thing). She rarely drinks water, it is many filled with Pepsi or Mountain Dew, though when she does get the occasional "I feel and look horrible" mind, she will slip in a diet coke thinking it is anything better.

For dinner she makes it. But it is usually some fat cut of steak, or pasta dish. She never really grew up with veggies, after all her parents rarely ate them either, so then probably still thinks she hates the majority of veggies. When she does eat salad, she covers it in the high fat dressings. And then, later that night she will sit down on couch to watch tv with a bowl filled with a triple serving of fudge track ice cream smothered in caramel sauce.

This is how my mom eats...she's been as heavy as 350+ before she stopped looking at it. Sometimes it goes down as she controls her portions and starts swimming again, but her actual diet never changes. :-( I wish she'd at least add a few fruits n' veggies in there for balance.
