ETL, I can't eat enough cals!

My husband and I are now officially whole food plant based vegans. But if I only eat when I'm hungry 3x a day with no snacking I'm getting anywhere from 500-1200 calories. I don't want to stuff myself just to consume my minimum calories, but I don't want to put my body in starvation mode either.

Is my body okay with so few calories because of the nutrition that I'm getting?

    No, your body is not ok with that few calories. Eat a hand full of almonds with every meal. You'll get in a few extra 100 calories. There's plenty you can eat. You're doing yourself no favors by eating so little.

    No it's not. Your body still requires calories. The nutrients are great but a calorie is a unit of energy. If you body does not have the units of energy it requires to function it will begin to consume itself from whatever areas it deems as unnecessary to keep you alive. Muscles being one of the first to go.

    How few calories are you talking about? It's pretty hard to eat very low calories and get proper nutrition. When you speak of nutrition are you including macro- and micro-nutrients. Are you getting enough fat, protein and carbs? Enough vitamins, calcium, iron, zinc, etc.?

    I actually logged the foods I've been eating and realized I'm getting more calories than I thought, but thanks for the replies, I'm going to continue to log my foods just to be sure!
