Extreme Sugar Crashes

So I've been having this problem in the last six months where if I consume even a small amount of processed sugar (like a half a candy bar) I will crash within 5-10 minutes of consumption. I will feel like I'm about to pass out and I can't stay awake; I'll fall asleep for two hours because I feel exhausted from a piece of candy. It's to a point now where even homemade baked goods and some sweet fruits, like strawberries and ripened bananas, will have a similar effect.
I am not diabetic, not overweight, and I had some blood work done and I'm supposedly not hypoglycemic. Anyone having similar issues???
Is anyone aware of any diet adjustments that might help other than the basic, eat balanced, avoid processed foods? For example, has anyone attempted a vegan diet helped or an Atkins diet and seen positive results?
Looking for anecdotes and diet plans used to solve.
Thank you!!!
