What is your fav vegetable?

As much as I love em, I find I sometimes get in a veggie "rut" when deciding what to buy each week...what is your favorite?

    That's tough to decide on one. I would say onions, but here are some of my other favorites:

    Asparagus
    Baby spinach
    Cucumber
    Brussels Sprouts (Yes indeed)
    Corn
    Peas
    Bok Choy
    Broccoli

    Edit: Also, green beans. Gawd, in season green beans are heavenly.

    As you can see, I mostly like green things, lol.

    Depends really, I like pretty much all veg and really enjoy the seasonality aspect. Right now the asparagus farm close to me will be open soon. He imports workers for about a month, then the season is done. Fiddleheads are now in season, and always get my fill, the season is litterally only weeks for the good ones, which I go and get in the forest that I can see from my yard . Zucchini blossoms coming, going to fill those flowers, yum, garlic scapes soon and will be making my yearly pesto with it. So many vegetables and little time. :smile:

    As far as fresh vegetables go, I like raw green beans, yellow squash, zucchini

    Grilled asparagus is also really good but I only buy asparagus when it is on sale.

    I love asparagus, but it's too expensive to have often.
    I mostly eat brocolli, cauliflower, parsnips and carrots

    cooked carrots. Not canned ones, but cut up whole carrots cooked at home ....... that there's natures candy !!

    I love all vegetables ..bar aubergine (eggplant). Favourite is definitely Broccoli though!

    Potatoes, yup.

    Then radishes, spinach, asparagus, broccoli, brussel sprouts, guess tomatoes aren't technically a veggie, but I love them, and peppers of all sorts.

    Historically I HATED veggies... we are actually forming a nice little relationship, veggies and I. What I eat most are:

    Squash & Zucchini
    Peppers (in EVERYTHING)
    Broccoli/Cauliflower
    Carrots
    Asparagus
    Spinach

    Carrots, celery, shredded broccoli, shredded cabbage, onions, bell peppers, new potatoes, sweet potatoes.

    When they are in season: tomatoes, cucumbers, summer squash, brussel sprouts.

    asparagus and beets are my favorites. asparagus can be crazy expensive (usually $5 a pound here) so we only buy it on sale. my husband doesn't like beets so i don't bother to cook them often. that said when my husband is out of town on business i live mostly on roasted beets, yellow and orange bell peppers, and green beans ;-)

    we eat a lot of spinach, swiss chard, broccoli, carrots, brussel sprouts, cauliflower, sweet potato, winter squash, zucchini, kale. it changes with the season and what is at the farmers market...which finally reopens this coming weekend!!!

    Bell pepper - any color but green. I eat the green but it is not included in my favorites. They are so versatile - eat them in eggs, salad, raw, on the side with a meal, cooked, raw, etc.. :)

    Thanks everyone! The one that was unfamiliar to me was choi sum. Had to look that one up...turns out it is what we call around here: baby bok choy, which I've seen but not bought.

    If I had to pick one....Cauliflower! It's so versatile!
