Sage and shallots (or garlic) Sage is awesome, awesome with Turkey, think Thanksgiving!
Here's what I'd do:
Mix zest of one lemon, 1 tsp sage(fresh is best or whatever you can get your hands on), a bit of salt and pepper and a tsp olive oil, 1 chopped shallot or 1 clove garlic, toss with veg OR rub onto your turkey.\

I'm also a big fan of sage with turkey. Or you could try marinating in some citrus juice, and then reducing it to a sauce and adding some fresh herbs.0
