Craveable "Skinny" Nachos

One lb red yellow and orange peppers. washed deveined and dried. sprinkled with salt and pepper.
1 Diced tomatoes
1/4 cup Jalapeno pepper rings
1/4 c Olives
1/4 c Chopped green onions


Arrange all the pepper pieces on a tray. Top with remaining ingredients.

    If you put ketchup on a rice cake that's pretty much what you'd be eating.

    Seriously. I'm not trying to poke fun. I'm the queen of nachos... I LOVE them and have several different recipes in my section and eat them every other week I would bet...

    I could totally spread some pinto bean puree on them with some seasonings and broil them and they'd probably be yummy (even WITHOUT the cheese *gasp*) but I'm not seeing it as something just veggie and raw...

    *will feel really dumb if this is one of those threads that's supposed to be funny because then I'm the idiot believer and if that's the case it's because this is actual food and you don't joke about food*

    Nachos sound yummy , i recently found popped rice cakes flavor sour cream and onion at dollar general and only 1 dollar, omg! delicious i soooo love these. not your typical rice cake. i can also eat 18 of these little mini cakes for 130 calories. they also have barbeque flavored which i bought but havent tried yet. so if anyone is thinking ugh yucky rice cakes, believe me you will love these. i know i do, plus they are a great replacement when you feel like eating a chip. i also love the baked chips like the baked doritos, but my favorite is baked cheetos. they still taste like a cheeto but you can have 34 pieces for 130 calories... so there a lot of healthier options to keep us on track when we feel like eating something tasty. :smile:

    Wow! I think I'm going to try these tonight! Except, instead of the peppers, I'll use chips. And instead of the olives, I'll use cheese. And instead of tomato, I'll have a beer. Yep, and I'll log them as my skinny nachos. :wink:

    Regular nacho chips are anywhere from 120 to 140 calories a serving, around 12 chips or so. If you like the rice cakes, enjoy, but the calorie difference isn't worth it otherwise.

    How can this even be considered a nacho?

    No chips.
    No meat.
    No cheese.
    No beans.
    No salsa.
    No sour cream.

    These aren't nachos in my book.
