potato salad with greek yogurt instead of mayo?

Not a recipe, per se, but yes I've used it and it's great! You can replace the mayo on your recipe with non-fat plain greek yogurt. I sometimes will add just a tablespoon of mayo for flavor. A splash of white wine vinegar and a pinch of sugar is also good instead of the mayo. Have fun with it - I add all kinds of veggies minced finely to my potato salad - like carrots, radishes, green bell peppers, jalapenos, etc. When adding the veggies, which are sometimes watery, you might want to drain the yogurt on several layers of paper towels for a few hours in the fridge. Also after the finished salad sits a while it will tend to get watery, don't mix the water back in, drain it out.0

I don't see why not. I've made chicken and tuna salad w/plain yogurt instead of mayo and the taste was very good. You can also use part greek yog/part mayo or part lowfat sour cream/part yogurt for the potato salad.0

I replace mayo with Greek yogurt in pretty much everything. It's really good, and you can also add chopped herbs to the yogurt for more flavor (dill would be good in potato salad, I bet).0

Thanks everyone I am definitely going to try it. I have made chicken salad with plain non fat greek yogurt and it was way better than with mayo. I just wanted to see what others thought before making it and then potentially not liking it.0

Why is it you don't want to use mayo?
Cuz of the fat content? Its just oil and eggs

i don't have a recipe but i have used it instead of mayo.i also use fage yogurt in place of sour cream in most of my recipes.0
