how do i eat enough calories?

I started a weight loss and nutrition program early this year, and of course the first 30lbs shed off pretty easily. I just started round two and things are getting a little slower, which I expected.
My trainer right now is stressing that I am not eating nearly enough calories, and some days I finish my food and exercise log with 1000 calories remaining. Some days, after working out..my calorie limit is around 2300. I'm probably a little TOO calorie conscious right now, but I try my hardest to make healthy meal and snack choices. I try to make sure to get a mixture of fruits, vegetables, protien, and grains.. But I'm not meeting my limit.
I feel like in order to eat as many calories as I am being told to eat.. I would have to do one of two things:
Eat healthier foods pretty much constantly throughout the day, which would probably make me sick
Or..
Eat high fat, high calorie foods..which wouldn't really help in my mission toward a healthier life.
I'm really trying here, I would love any insight or suggestions anybody could offer me. I tried asking my gym's nutritionist but I didn't really get any answers.

Nothing is wrong with eating full fat meals. Lose the low fat products and eat natural foods. Full fat yogurt, avocados, peanut butter, nuts, cheese, etc. Keep your protein intake high, but do enjoy your food and don't fear the fats!0

? I don't know how beefing up your calories in a healthy way would make you sick? Try adding some nuts to a salad if you are eating salad. Putting an extra slice of cheese on your food. Add an extra ounce of protein to your dinner. Little things can add up. That is how I am able to stay below my calorie goal, but cutting out the little things. Try adding something like KEFIR that has some extra calories but digestive benefits.0

A good calorie adder is a Protein Powder (100% Whey--Vanilla), add it to your coffee (Yum!) or orange juice (but OJ is high in sugars). I always fall short of calories, and protein....so the PP might help you!0

I agree with this!!! Peanut butter, nuts, avocado's and cheese have a lot of calories but they are good for you!!!0 -
Do you like avocados? Eat one as a snack. Nuts and nut butters are good too. The right kind of fats shouldn't scare you at all.0

I agree with this!!! Peanut butter, nuts, avocado's and cheese have a lot of calories but they are good for you!!!

Your diary is not public so I may give advice you already do. But I would buy regular and not fat free. Eat nuts, trail mix, add some healthy oils to your foods when cooking. Protein bars or whey powder is good. and the advice about adding an extra slice of meat or cheese is great. It all adds up! Also for some people eating small meals all day doesn't work. Maybe 3 large meals and a few snacks? Also some people drink too much and it keeps them full. You want to drink a lot of water but not to the point where it takes away from cal intake. Good luck!0

How are you determining your exercise calories? If it's online or machine calculations, they can be off. Continuous Heart Rate Monitors (HRMs) are usually more accurate. I know for me, MFP's estimates are nearly double what my HRM says.0

I use a heart rate monitor :-). I was amazed how off the machines and MFP were.0
