Cauliflower Taco Shells!
If you are not interested in making anything out of cauliflowers and feel like people should just eat the real thing, good for you! Eat the real thing. I eat the real thing all the time, but...this is a great idea if you want a lower calorie option.
I have not tried these yet, but ran across the recipe and I will be trying them for sure.

Ingredients:
1 medium head of cauliflower (all the flowerets)
3 eggs OR 4 egg whites
Instructions:
Preheat oven to 375 degrees
Use a food processor, blender, or hand grater to grate the cauliflower into a crumb-like texture
Microwave the cauliflower for 5 minutes, stirring a little halfway through
[If you don’t want to use a microwave for Step 3] Move the grated cauliflower to a pan and add 1/4 cup of water. Cover the pan and steam over medium-high heat for about 8-10 minutes. Just make sure to stir half-way through to avoid the cauliflower from burning. Keep in mind that you will have a bit more water to squeeze out.
Place the now-cooked cauliflower in a kitchen towel, that is on top of a seive, on a bowl (wow, that was confusing.. look at the pictures below). Make sure to drain as much exces water as possible.. there is surprisingly A LOT of water in cauliflower
Mix the drained cauliflower and eggs until smooth
Place the mixture on a baking sheet into circles at about 1/4” thick.
Bake for 10 minutes. Flip. Bake for another 5-7 minutes. This is important to dry out the tortilla
Move the tortillas to cooling rack to cool, so the bottom does not become soggy

Looks good, do you know the calorie count? Corn tortillas are fairly low also, 80 cals for 2! Super easy to bake and taste better than the fried, boxed ones.0

Seriously? I still cant get that damn cauliflower pizza crust to turn out. Shoot, I'd never be able to make them look like those awesome tacos...:grumble:0

I do something very similar as a pizza crust and it's absolutely delicious! My husband has actually grown to love my cauliflower crust pizza better than regular pizza!!

I entered it into the recipe editor. My cauliflower head was 7 cups' worth. With three whole eggs added, the total was 360 calories. I got ten smallish tortillas out of the batch and am nomming now. Eight would have been better - they would need to be pretty thick to stand up to any kind of handling or toppings. Mine are a bit crumbly, although I processed the cauliflower to a pretty fine crumb. Tasty with a bit of butter or a sprinkle of shredded cheese, though. The ones cooked on the bottom rack browned up a bit and are the best.
A single Mission white corn tortilla is 40 calories. At 36-45 apiece, this recipe isn't a low-calorie alternative to those, but interesting nonetheless, and coud be a viable choice for anyone who's avoiding corn or sneaking crucifers into somebody's diet. For my part, I think I wouldn't make them into tacos, but would make them thicker as an alternative to pancakes.
ETA: 20-something son, a fairly healthy eater who loves grilled cauliflower, was unimpressed. His first comment: "I'm not that into eggs," and he totally tasted the cauliflower. Quite a bit of effort for an outcome that was, well, meh. But I might make them again for pancakes as mentioned above. I kind of liked them straight from the oven and couldn't have eaten that much cauliflower any other way in one sitting!0 -
