I"m looking for something good to eat tonight..
I'm a relatively picky eater too, i'm not into hot or spicy food..
I'm looking for some sort of low cal chicken platter..
any ideas?

I'm making white bean and Italian sausage stew. Real quick and simple, and you can substitute chicken Italian sausage (sweet, not spicy) for the pork sausage.
Here's the recipe (from Epicurious):
2 T. extra virgin olive oil
6 whole sweet Italian sausages (about 1-1/4 pounds)
4 garlic cloves, peeled & crushed
6 c. white beans (cannellini), drained & rinsed
1 can (14-15 oz.) whole plum tomatoes in juice; tomatoes chopped & juice reserved
2 large fresh sprigs of sage (or rosemary)
1-1/2 c. water (or chicken broth)
Heat oil in large skillet over medium heat. Add sausages & saute until browned, about 5 minutes. Add garlic & saute stir into sausages, cooking for about 30 seconds (don't let it get brown). Add 1/2 c. water (or broth), tomatoes with juice, and sage (or rosemary). Simmer 5 minutes. Add beans and 1 c. water (or broth). Cover and simmer until sausages are cooked through, adding more water (broth) if dry, about 30 minutes. Uncover and simmer until sauce thickens, if desired. Season with salt & pepper.0 -

Baked chicken breaded with almost flour, flax meal, and whatever spices you want. Or chicken (w/skin) with lemon slices under the skin, and rosemary (or another spice you enjoy), baked as well. If you don't want it, take the lemon off, skin keeps it from getting dried out, adds some flavor, and can be easily removed later.0

Take some chicken breast or thighs. Season with salt, pepper, or a seasoning mix you like and brown it in a pan, add in four tablespoons of balsamic vinaigrette and 1/2 cup chicken broth. While that is cooking, chop up some sun dried tomatoes, fresh basil (blanch first), and garlic (you can cook the garlic a bit first if you don't like raw garlic). Mix it up and add in a bit of cheese (I like feta or goat cheese). Top the chicken with the basil mix and drizzle the balsamic mix over it. You could also add some prosciutto or bacon.0
