Avocado amd Spinach Smoothie

Today we had an avocado demonstration in our work cafeteria. The chef presented this recipe which we all tried. It was so tasty, I thought I'd share it. Excellent way to incorporate both healthy avocado's and spinach into your daily food.

1/2 each, Avocado, peeled, cubed
1 packed cup fresh spinach, rinsed (you can leave on stems)
1/2 oz chopped green onion
1 Tbsp Cilantro leaves
1 Tbsp Parsley leaves
1/2 cup apple juice
Combine all ingredients in a blender. Puree mix until very smooth- can serve plain, or over ice, or add ice to the blender.

Yield - 1 Cup
Calories - 167
Protein - 3.3 g
Carbs - 22.2 g
Fat 8.8 g
Cholesterol - 0
sodium - 58.5 mg
Dietary fiber 5.8 G
Sat. fat - 1.3 g

    I think I will try it with the avocado...I did this recipe but the onion was way too potent along with the cilantro so hopefully the avocado will tone it down a little :) thanks for the post!!!

    Sounds like good stuff and I have fresh parsley & cilantro in my garden! I think I'll exchange the apple juice for plain nonfat yogurt and call it a meal. That way there's more protein & calcium.

    Looks great; lots of healthy fats and fiber. It seems unusual for a caveman like me but I'm certainly willing to try it myself.
