How to win the race against cucumber collapse

Cucumbers are notorious for going bad before you get a chance to eat them, especially if you are cooking for one or two people. Four people can easily demolish 1 large cuke cut into sticks. But a single person? Not so much. And there’s nothing more disheartening than finding what’s left of a cucumber sitting in a puddle of its own juice in the bottom of the veggie drawer.

What can you do with a cucumber so that you don’t have to gobble it in one sitting? Divide and conquer.

    Great blog! I love all the photos of your bread baking, wow, wish my attempts at bread looked like that. Could you do calorie calculations for all your recipes? That would be really helpful to me.

    Didn't realize I was in the minority. I frequently eat an entire cucumber before or after dinner.

    Hm, I must be unusual. I can eat a whole cucumber (raw or in Italian dressing) by myself.

    My husband and I can easily go through about 2-4 in a week. If I do notice though that we have not been having a very veggie consuming week I juice it!
