Coriander potato cakes
Makes about 10

800g raw potato
1 teaspoon salt
1 teaspoon chilli powder
2 teaspoons gram flour
1 teaspoon chopped fresh coriander
spray oil
1 egg
1 - cook the potatos in the microwave. Cool slightly then scoop out and mash in a bowl. Allow to cool.
2 - Once cpotato is cold add the salt, chilli powder, gram flour and coriander and stir well.
3 - Wet your hands with water and taking a small amount of the mix roll it in your hands, then pat down to make a patty/cake.
4 - Dip each potato cake in the beaten egg and gently fry in a pan with 4-5 minutes. Turning them over to cook both sides.

This goes nice with curry
