    banana rum pancakes made with steel cut oats. some of the best pancakes i've ever made. hard to believe that something made with steel cut oats, whole wheat flour, and flax meal could be so fluffy (yet very hearty and filling).

    Can I have the recipe for these?

    Can I have the recipe for these?

    Pancake recipe:

    Cook 1/4 dried steel cut oats according to package instructions (my oats are a quick cooking variety that use less time/water). When they are finished cooking stir in two tablespoons of flax meal and let sit a couple of minutes.

    Combine cooked oats with:

    1 cup of milk (i used unsweetened flax milk)
    1 mashed banana (very ripe)
    2 tablespoons sour cream (use light for fewer calories or add a couple more tablespoons of milk for vegan)
    1 tablespoon spiced rum

    In another bowl whisk together the dry ingredients:

    3/4 cup all purpose flour
    1/2 cup whole wheat flour
    1/4 teaspoon salt (I cooked my oats with a bit of salt. If you don't you might double this)
    1 tablespoon white sugar
    1 tablespoon baking powder

    Very gently stir the wet ingredients into the dry until just moistened. Do not over mix or your pancakes will be tough - using a gentle hand is important. I used a 1/4 cup measurement to make each pancake. Made about 10.

    For the topping:

    I mashed half of a banana with about 6 tablespoons of maple syrup and a splash of rum then heated it up for a about 10-15 seconds in the microwave. This made enough topping for about 3-4 people, depending on how much you want to drown your plate. :)

    Caeser salad, pumpkin and pulled pork with spicy BBQ sauce.

    We had dinner out at a lovely Thai place to celebrate a friends birthday, we ate way too much food and we didn't really need this dessert platter - but man, it was fantastic:

    Sandwich with:
    Mashed avocado and salsa (spread on bread), roasted red peppers, 98% fat free turkey breast, Daiya Jack cheese, red onion, fennel, fresh basil leaves, hydroponic lettuce, sliced avocado on garlic topped bread.

    Slaw:
    Shredded cabbage, carrots, fennel fronds, fresh dill, granny smith apple, reduced sugar cranberries, cumin, apple cider vinegar, extra virgin olive oil, salt, pepper.
