kinda depends on what you like to eat.. what type of protein, carb or veg that you want to incorporate.0

When I'm out of ideas I look in the fridge, see what main ingredient I've got then google it - you have to have a starting point or you can guarantee you'll find recipes for everything EXCEPT what you've got in!
There's loads of recipes for one but don't limit yourself - pick what you like and divide the ingredients all by 2 or 4 or however many it serves - it usually works fine for me. Enjoy!0 -

One of the easiest things I can think of is a grilled chicken breast or salmon (or any fish) with a side of broccoli, and a side of quinoa, then I eat a piece of fruit or a fruit yogurt for my "dessert" I buy the chicken breasts in individually wrapped and/or frozen, that way I can thaw a piece at a time and they don't go to waste. It's not that exciting of a recipe, but its a healthy meal for one!0

a SALAD is always a good option !
There are millions of possibilities.
Lots of vegies options: letuce, tomato, bell pepper, cucumber, radish, carots, brocoli, olives, fennel...
Lots of protein options: cheese (mozza, feta, cheddar...), boiled egg, thuna, ham, chicken breast, turkey, soya...
Lots of carb options: rice, wheat, quinoa, pasta, couscous...
Lots of dressing options too ! balsamic-olive oil, lemon-olive oil... you can replace the oil by avocado juice ! delicious with less fat. you can reduce the volume of oil by using 50% water-50% oil.
