I have been on and off and am just now starting the elimination phase all in. Are you a vegetarian or is there anything that you do not like? I found a blog called HungryHungryHippie.com that has some different recipes and she records pretty much everything she eats. She's a vegetarian though, which I am not. I think she recently started eating fish though (I don't read it religiously).
My staples are smoothies (almond milk, protein powder and some sort of safe fruit... I add stevia or extracts as needed for flavor), spinach in some form, salads with safe veggies, lots of chicken, lots of canned tuna, rice, rice cakes and eggs. Occasional items are potatoes, nuts and frigo light string cheese (it has no carbs and mozzarella is on the allowed list for the elimination phase).
I have made homemade pasta sauce in the past, but it's been a while since I wasn't eating pasta. I will try it again soon though and either just eat the meat sauce or use rice pasta.
