I think I am at a plateau? Advice please

Background: I am a 48 yrs old Female Nurse. 5 foot 1 inch
I work 3 days a week, 2 of them I walk for 6 of the 8 hrs and 1 day I sit most of the time.
I do Leslie Sansone Walk at Home 2 mile (1/2 Brisk walk/ low impact aerobics) 3x week.
Of course, I am a mom to 3 kids (2 at home) so I don't sit on the couch and do nothing. There is a house to clean, laundry to do, shopping, cooking, yard work etc...meaning I don't sit around and eat Bon Bons all day.
I don't do lifting or anything more because I suffer from Fibromyalgia and have Hashimoto's. I do take medication for my thyroid but my levels are in a normal range right now. Both of these leave me so exhausted it's crazy. I HAVE tried to work through the fatigue and muscle issues but it truly kills me. Not an excuse just a plain up fact.
My diet is pretty good (I think). I have macros set to 40 Carbs, 30 Protein, 30 Fat. Hard to hit the protein some days. Some days the sodium could be better. ALWAYS drink my water. The last 8 days I have eaten more poorly than usual (feeling frustrated with counting calories) but was still in my calorie range.
Started out at 1280 calories by MFP until April 8th when I upped my calories because I was always starving.
Went to 1435 (random number I picked) After 4 weeks I was down 2 lbs... not blazing any trails but ok. I jumped on the TDEE bandwagon and upped my calories to 1561. After 2 weeks of that I have gained I have gained 2.5 lbs.
Dropped it today to another random number of 1475. It doesn't matter what number I am at .... I am ALWAYS hungry! I was thinking maybe I should take in less carbs but other than that I feel like I am missing something or need to be more patient. Not even sure I should drop it to 1475 but I don't want to go another 2 weeks and gain 2.5 more lbs.

A plateau is generally defined as 4-6 weeks with no weight loss. 2 weeks with no loss (or even a gain) after a caloric increase is within the realm of normal fluctuations, imo. Personally, I would recommend sticking with the TDEE - 20% method for a few more weeks to let your body catch up to the changes.0

I guess my brain was looking at the fact that I am the same weight as 9 weeks ago right now. I am just afraid to wait 2 more weeks and gain more weight.0

I guess I will keep it at 1560 for 2 more weeks.
Any other input would be appreciated. I am not looking for a quick fix... I didn't gain this weight over night so I know it will take time. I am just a little frustrated.0
