Anyone have a good quinoa recipe?

I bought some at the store today. I've never had it before but would love to try it. My husband and 10yr old son are VERY picky, so I hope that they will like it as well. I am hoping to incorporate it into my regular side dish rotation because it is so good for you.

    I have a recipe but I have not tried it yet. It is by Tosca Reno: Quinoa with Sundried tomatoes

    1 tsp olive oil (best quality)
    8 sundried tomatoes not packed in oil
    2 minced shallots
    1 clove of garlic minced
    2 cups low sodium/fat chicken broth or veggie stock
    1 cup dry quinoa grains
    Pinch of Cayenne pepper
    2 tbsp fresh chopped cilantro
    1 tsp sea salt
    fresh ground pepper

    Prep:
    1. place quinoa in fine mesh sieve. Rinse well under lukewarm running water for 1 minute. Set aside

    2. Heat oil in large saucepan. Add tomatoes, shallots, and garlic - saute for 3-5 min or until shallots are softened. Add stock or water and bring to boil. Stir in quinoa and cayenne pepper. Return to boil. Reduce heat and simmer for 30 min or until liquid is absorbed. Let stand 5 min. Fluff with fork and stir in seasonings.

    Nutritional Value: 6 servings
    128 cals/ 23 cals from fat/ 5g protien/23g of carbs/ 2g of dietary fiber/ 1g of sugars/ 3g of fat/ 211 mg of sodium
