Banana Bread Muffins - Paleo (dairy free, too!)
I have had requests for this, so here ya go:
Ingredients:
4 bananas
4 eggs
1/2C almond butter
3T coconut oil
1T cinnamon
1/2T nutmeg
1t baking soda
1t baking powder
1t vanilla extract
1/4t sea salt
Mash bananas well and then mix all ingredients, mixing until well combined.
Put batter into greased or lined muffin tin and bake at 350 degrees Fahrenheit for 20-30 minutes until a toothpick inserted in center of muffin comes out clean.
Makes 12 muffins. Or you can adjust cooking time to about an hour for a loaf of banana bread.
