Low Carb Raspberry Muffins (with Pics)

Hello again,

Another low carb recipe I tried this afternoon. This time raspberry muffins for dessert :)

Ingredients:

- 1cup (90g) Soya Flour
- 1/2 cup (20 tsp) Splenda
- 1tsp Baking Powder
- 2 whole eggs
- 1/2 cup (120g) heavy cream - I used Fage 0% Fat Yoghurt
- 1/3 club soda
- 1cup (100g) raspberries

Instructions:

1. Preheat the oven to 375F (190C)
2. Spray muffins tray with Pam or any other suitable oil
3. Mix all the dry ingredients
4. Add eggs, cream and soda to the dry mixture andmix all together until smooth
5. Fold in raspberries
6. Fill the muffin cups with the batter
7. Bake for 25 minutes
8. Cool down
9. Enjoy

Servings: 7 muffins (could be more depending on size of muffin cups)

Nutrition (per 1 muffin):
- Calories: 94
- Protein: 8g
- Fat: 4g
- Carbs: 5g
- Fiber: 2g
- Sugar: 3g


One could try adding Vanilla Whey Protein and use less soya flour to increase protein and lower carbs and fat amounts (I'm going to try next time I make these ;))

    These are so delicious that I decided to make more and this time doubled the amount of ingredients. I've also added 1 more tsp of baking powder and increased the temp to 200C (390F)

    Fantastic! I have been looking for low calorie, low carb baked goods. Soya flour is new to me so this will be an adventure.

    Here is a blueberry version of the muffins:

    I've made small change to the recipe:

    1. 0.5tsp of baking powder + 0.5 bicarbonate of soda ---> instead of 1tsp baking powder
    2. replace club soda with milk
    3. 0.5 tsp of vanilla extract
    4. blueberries instead of raspberries (i cut mine in half)

    The texture difference is pretty substantial I found
